This creamy tomato orzo recipe is ideal for weekdays. It’s quick to prepare, requires few ingredients, can be made in one pan (saving on washing up) and is sure to please everyone because it’s completely vegetarian — or even vegan!

Making orzo with tomato and spinach
You might not be familiar with orzo, but it’s a type of pasta that resembles rice. It’s prepared in the same way as pasta and I think it’s really delicious! I already have several tasty pasta recipes on my blog. I also have a recipe for a delicious tomato risotto, but I was still missing an orzo recipe.
This delicious tomato orzo with spinach has changed that. It’s an easy one-pot dish with vegetables that is deliciously creamy thanks to the herb cream cheese. It’s absolutely not complicated, but fantastically tasty!

Tomato orzo pasta recipeÂ
This easy creamy tomato orzo recipe contains just a few simple ingredients packed with flavor. Aside from the herb cream cheese, I added fresh garlic, fresh and sun-dried tomatoes, Parmesan cheese and fresh basil to top it all off. As easy as that! Let’s get cooking..


Ingredients
- 1 onion (chopped)
- 2 cloves garlic (crushed)
- 50 gram sun-dried tomatoes (finely chopped)
- 2 tbsp tomato purée
- 300 gram fresh tomatoes (diced)
- 175 gram orzo
- 500 ml vegetable stock
- 100 ml cooking cream
- 150 gram spinach
- 2-3 tbsp herb cream cheese
- olive oil, salt and pepper
- optional: Parmesan cheese and fresh basil
Equipment
- Large frying pan
INSTRUCTIONS (how to make this recipe):
- Heat a little olive oil in a frying pan and sauté the onion and garlic.
- Add the sun-dried tomatoes and tomato purée and fry briefly.
- Add the chopped tomatoes.
- Then add the orzo and vegetable stock, bringing the mixture to the boil.
- Finally, add the cooking cream and the spinach, stirring until it has wilted.
- Finally, add 2–3 tablespoons of plant-based Boursin cheese. Cook until the orzo is done, then season with salt and pepper to taste. Enjoy your meal!
