You might not immediately think of this combination, but the flavors go together wonderfully. The slightly sweet, warm flavor of pumpkin combined with the rich, nutty flavor of peanut butter creates a delicious, full-bodied savory taste. This soup has a deliciously creamy texture. It’s a soup to savor. Everyone can enjoy it because it’s vegetarian and vegan!
Pumpkin Peanut Soup Ingredients
This soup contains few ingredients, most of which you might already have in your pantry. The soup is inspired by Javanese peanut soup and other Asian flavors, hence the use of coconut milk and ginger.
- Pumpkin, I used butternut squash but you can also choose a different variety.
- Peanut butter, preferably a 100% peanut butter without additives as this might impact the flavor.
- Aromatics, ginger and garlic are my flavor of choice for this soup.
- Liquids, I used both vegetable broth and coconut milk.

This pumpkin soup with peanut butter is really something different, and that’s exactly what makes it so delicious. You can also try this spicy pumpkin soup or my Thai pumpkin soup. They are both delicious and full of flavor.
The soup is also very easy to make! No complicated preparation techniques, just cook the pumpkin with broth and add the coconut milk and peanut butter later. I like my soup a little thicker, but you can always add a little extra liquid or reduce the soup a little less, depending on your taste. Garnish with chopped peanuts and fresh herbs such as parsley or coriander and serve.

- 2 clove garlic (finely chopped)
- 1 onion (chopped)
- 1 tbsp fresh ginger (grated)
- 350 gram pumpkin
- 750 ml vegetable broth
- 125 gram natural peanut butter (without chunks)
- 150 ml coconut milk
- Unsalted coarsely chopped peanuts
- Fresh parsley, coriander, or thyme
- Chili flakes

INSTRUCTIONS (how to make this recipe):
- Heat some oil in a pan and briefly fry the onion, garlic, and ginger.
- Meanwhile, peel and cube the pumpkin.
- Add the pumpkin and fry briefly. Then, add the broth.
- Bring to a boil, then simmer until the pumpkin is cooked (about 10-15 minutes).
- Add the peanut butter and heat through.
- Puree the soup until smooth using an immersion blender or a regular blender.
- Add the coconut milk, then season the soup with salt and pepper. Garnish with coarsely chopped peanuts, fresh thyme, and chili flakes, if desired.
