Vegetarian Rice Salad Recipe
This easy rice salad is completely vegetarian and can be made vegan. Thanks to the rice, it’s gluten-free, too. Whether you choose it consciously or not, it’s suitable for everyone. It’s ideal if you’re eating with a large group or looking for a tasty side dish for the barbecue.

Make your own delicious salad
Making this rice salad is absolutely not difficult. You cook the white rice and let it cool completely, preferably in the refrigerator. Note: Put the rice in the refrigerator only after it has cooled to room temperature.
Then, mix the rest of the salad ingredients: green and red bell peppers, creamy avocado, corn, cherry tomatoes, and cucumber with the rice, along with a delicious dressing. The surprising flavor enhancer here is sesame oil.
Choose 100% pure sesame oil if possible, as it is even tastier. Add only a little to the salad and it gives it a delicious nutty flavor, yum! Are you going to make it?

- 2 bell peppers (red and green)
- 1 avocado
- ½ cucumber
- 125 gram cherry tomatoes
- 150 gram white rice (cooked and cooled)
- 150 gram canned corn (drained)
- 3 tbsp mayonnaise
- 2 tbsp fresh parsley (finely chopped)
- 1 tbsp lemon juice
- 2 tbsp sesame oil
- ½ tsp chili flakes
- salt and pepper

INSTRUCTIONS (how to make this recipe):
- Cut the bell peppers, avocado, cucumber, and cherry tomatoes into small pieces.
- Place them in a large bowl. Mix in the cooled, cooked rice, corn, mayonnaise, parsley, lemon juice, sesame oil, chili flakes, and salt and pepper to taste.
- Serve the rice salad as a simple meal or as a side dish for a barbecue. Enjoy!
