Heat the oven to 200 degrees Celsius / 390 Fahrenheit, top and bottom heat.
Using a hand mixer or electric mixer, beat the butter and sugar until light and fluffy, about 3-4 minutes.
Add the egg and continue to beat until incorporated.
Add the vanilla extract and then the flour, cinnamon, pinch of salt and baking soda. Mix until everything is combined. Divide the mixture into 10 balls.
Mix the sugar and cinnamon in a separate bowl and roll the balls in it. Press lightly to make thick, flat, round biscuits.
Place on a baking sheet lined with parchment paper and bake for about 10 minutes until golden brown. Leave to cool and enjoy!
