Ingredients

  • 1 small red cabbage
  • 1 large apple (thinly sliced)
  • 100 gram carrots (julienned)
  • 50 gram raisins
  • 50 gram walnuts (coarsely chopped )
  • 100 gram Greek yogurt
  • 1 lemon (juice)
  • 2 tsp honey
  • 1 tsp Dijon mustard
  • 1 bunch fresh chives (finely chopped)
  • Salt and pepper

INSTRUCTIONS (how to make this recipe):

  • Finely chop the red cabbage, preferably using a mandoline, to make it very thin. Place the chopped cabbage in a large bowl.
  • Add the apple, carrot, raisins, and chopped walnuts to the bowl.
  • In a small bowl, mix the yogurt, lemon juice, honey, Dijon mustard, and chives. Season with salt and pepper. Stir well until you have a creamy dressing.
  • Pour the dressing over the salad and mix everything together until all the ingredients are coated. Enjoy!
