Orange cake

The BEST orange cake. A moist, creamy, fresh and fluffy cake with lots of zesty orange. So, orange lovers, eat your heart out, you are in for a treat!

Ingredients

10 pieces
  • 350 gram butter (room temperature)
  • 350 gram sugar
  • 4 eggs (beaten - room temperature)
  • 125 ml orange juice (+ extra for icing - room temperature)
  • 200 gram Greek yoghurt (room temperature)
  • ½ tbsp orange zest
  • 1 tsp vanilla extract
  • 375 gram all purpose flour
  • 10 gram baking powder
  • pinch of salt
For the icing
  • powdered sugar
  • orange slices to garnish (optional)

Equipment

  • Hand mixer or food processor
  • Cake tin - about 25cm / 10 inches in diameter
  • Parchment paper

INSTRUCTIONS (how to make this recipe):

  • Preheat the oven to 175 degrees Celsius / 350 Fahrenheit. Line a cake tin with parchment paper (optional).
  • Using a hand mixer or food processor, beat the butter and sugar until pale and fluffy.
  • Add the eggs one at a time. Add the remaining ingredients and mix briefly to form a smooth batter.
  • Pour the batter into the cake tin. Bake the cake for about 75 minutes. You can test the cake with a skewer to see if it comes out dry.
  • Allow the cake to cool completely before making the icing. Mix some icing sugar with a little orange juice to make a thick paste. Spread this over the top of the cake and leave to set. Garnish with extra orange slices if you like. Enjoy!
