125mlorange juice(+ extra for icing - room temperature)
200gramGreek yoghurt(room temperature)
½tbsporange zest
1tsp vanilla extract
375gramall purpose flour
10grambaking powder
pinch of salt
For the icing
powdered sugar
orange slices to garnish(optional)

Cake tin - about 25cm / 10 inches in diameter

INSTRUCTIONS (how to make this recipe):
Preheat the oven to 175 degrees Celsius / 350 Fahrenheit. Line a cake tin with parchment paper (optional).
Using a hand mixer or food processor, beat the butter and sugar until pale and fluffy.
Add the eggs one at a time. Add the remaining ingredients and mix briefly to form a smooth batter.
Pour the batter into the cake tin. Bake the cake for about 75 minutes. You can test the cake with a skewer to see if it comes out dry.
Allow the cake to cool completely before making the icing. Mix some icing sugar with a little orange juice to make a thick paste. Spread this over the top of the cake and leave to set. Garnish with extra orange slices if you like. Enjoy!
