125grams chorizo(or any other spiced sausage, chopped)
300grams chicken(preferably skinless chest or thighs, diced)
2teaspoons cajun or creole seasoning
400grams diced tomatoes
500mlstock(chicken or beef)
250grams rice(preferably long grain)
olive oil, salt and pepper(optional: extra cayenne pepper)
fresh parsley(finely chopped)
INSTRUCTIONS (how to make this recipe):
Heat a little bit of olive oil in a pan and fry the onion and garlic for a while.
Add the pepper and tomato and fry until the vegetables start to soften.
Then add the chorizo sausage and chicken. Season with the cajun seasoning, salt and pepper and fry until cooked on medium heat. Add the diced tomatoes and the stock.
Stir, bring to the boil and add the rice. Now cook with the lid on until tender, stirring occasionally. While doing so, keep an eye on whether the rice cooks nicely. If necessary, you can add some extra water or leave the lid off the pan a little longer to allow the liquid to evaporate.
Taste whether the rice is done. Season to taste with salt and pepper. Garnish with parsley and enjoy!
