Jambalaya

Jambalaya, a tasty, slightly spicy white rice dish with chicken, vegetables and chorizo. This is an ideal one-pot dish to make and enjoy together!

Ingredients

4 people
  • 1 red pepper (diced)
  • 2 tomatoes (diced)
  • 1 onion (chopped)
  • 2 cloves garlic (finely chopped)
  • 125 grams chorizo (or any other spiced sausage, chopped)
  • 300 grams chicken (preferably skinless chest or thighs, diced)
  • 2 teaspoons cajun or creole seasoning
  • 400 grams diced tomatoes
  • 500 ml stock (chicken or beef)
  • 250 grams rice (preferably long grain)
  • olive oil, salt and pepper (optional: extra cayenne pepper)
  • fresh parsley (finely chopped)

INSTRUCTIONS (how to make this recipe):

  • Heat a little bit of olive oil in a pan and fry the onion and garlic for a while.
  • Add the pepper and tomato and fry until the vegetables start to soften.
  • Then add the chorizo sausage and chicken. Season with the cajun seasoning, salt and pepper and fry until cooked on medium heat. Add the diced tomatoes and the stock.
  • Stir, bring to the boil and add the rice. Now cook with the lid on until tender, stirring occasionally. While doing so, keep an eye on whether the rice cooks nicely. If necessary, you can add some extra water or leave the lid off the pan a little longer to allow the liquid to evaporate.
  • Taste whether the rice is done. Season to taste with salt and pepper. Garnish with parsley and enjoy!
