Place the chicken breast cubes in a large bowl and add the spices. Season with pepper, salt, and a dash of oil. Mix everything together and set aside.
In a separate bowl, mix all the salsa ingredients and season with salt and pepper.
Put some of the chipotle mayonnaise in a small bowl. For a nice, creamy sauce, dilute it with water and lime juice from the other half of the lime.
Heat some oil in a large pan and fry the chicken for 10 to 15 minutes, or until cooked through.
Then, heat a little oil in another pan and add a tortilla wrap. Sprinkle grated mozzarella and cheddar cheese over the tortilla and add some of the fried chicken breast.
When the wrap is golden brown on the bottom, use a spatula to lift one side and fold it over the other (see the photo above). Fry the taco until it is crispy, then remove it from the pan. Repeat until all the wraps and chicken breasts are used up.
Just before serving, spread tomato salsa and chipotle mayonnaise over the wraps. Serve immediately. Bon appétit!
