Cherry Crumble Sheet Cake

Buttery oat crumble layered with a sweet cherry filling makes these Cherry Crumble Bars the perfect summer dessert. Easy to make and perfect for sharing!

Ingredients

For the Crumble
  • 250 gram all-purpose flour
  • 225 gram cold unsalted butter (cubed)
  • 150 gram granulated sugar
  • 100 gram old-fashioned rolled oats
  • 1 tsp baking powder
  • Pinch of salt
  • 1 large egg
For the Cherry Filling
  • 400 gram sweet cherries (pitted and halved)
  • 1 tbsp cornstarch
  • 75 gram granulated sugar
  • 1 tsp almond extract

  • 8 x 12-inch (20 x 30 cm) rectangular baking pan

INSTRUCTIONS (how to make this recipe):

  • Preheat the oven to 350°F (180°C).
  • Grease the baking pan or line it with parchment paper.
  • Add the flour, butter, sugar, oats, baking powder, and salt to a large mixing bowl. Mix until the mixture resembles coarse crumbs.
  • Add the egg and mix just until incorporated. Be careful not to overmix - you want the mixture to stay crumbly.
  • Press half of the crumble mixture gently into the bottom of the prepared pan.
  • In a separate bowl, combine the halved cherries, sugar, cornstarch, and almond extract. Toss until evenly coated.
  • Spread the cherry filling evenly over the crust.
  • Sprinkle the remaining crumble mixture over the cherries and gently press it down.
  • Bake for about 60 minutes, or until the top is golden brown and the filling is bubbling.
  • Allow the bars to cool completely before slicing into 12 pieces.
