Burrata caprese salad

It's tomato season! And this burrata caprese salad has been my go-to summer salad for years. Simple, easy to make and ri-di-cu-lously delicious!

Ingredients

4 people
  • 500 grams cherry tomatoes
  • 150 grams burrata
  • 2 tsp dried oregano
  • extra virgin olive oil, pepper, salt and fresh basil

Equipment

  • Baking sheet
  • Parchment paper
  • Large bowl

INSTRUCTIONS (how to make this recipe):

  • Preheat the oven to 200 degrees Celsius / 390 Fahrenheit top and bottom.
  • Rinse the cherry tomatoes, cut any large cherry tomatoes in half and place on a baking sheet lined with parchment paper.
  • Sprinkle with a little olive oil, oregano, and salt and pepper to taste.
  • Place the baking sheet in the oven and roast the tomatoes until they begin to puff up, about 15-20 minutes.
  • Remove the baking sheet from the oven and place the tomatoes in a large bowl.
  • Place the burrata on top, shred if necessary, and drizzle with a little olive oil, salt and pepper to taste and some fresh basil leaves to garnish the salad. Enjoy your meal!
