Preheat the oven to 180 degrees Celsius / 355 Fahrenheit top and bottom heat. Grease the quiche pan with oil or butter.
Roll out the dough/puff pastry and poke holes in it with a fork (cut away any excess pastry). Place a sheet of baking paper om top, add the baking beans and bake the crust in the oven for 15 minutes.
Dice the pancetta and fry briefly in a dry frying pan. Drain on a sheet of kitchen paper.
Mix the eggs, cream, herb cream cheese and mustard in a bowl. Season to taste with salt and pepper.
Add the peas and the grated cheese. Finally, add the fried pancetta.
Pour the mixture into the quiche pan and bake for 30-45 minutes. Serve with a nice salad and enjoy!
