Asian Chicken Salad

A salad full of flavor and crunchy vegetables: this Asian chicken salad is a winner, with cabbage, carrot, chicken and a flavorful dressing.

Ingredients

For the Asian salad dressing:
  • 2 tbsp light soy sauce
  • 2 tbsp neutral oil
  • 1 tbsp sesame oil
  • 1 tbsp sesame seeds
  • 1/2 tbsp fish sauce
  • 1 tsp light brown caster sugar
  • 2 tsp fresh ginger (grated)
  • 1 clove garlic (pressed)
  • 1/2 tsp black pepper
For the salad:
  • 300 gram Chinese cabbage
  • 150 gram red cabbage
  • 50 gram carrot (julienne)
  • 2 smoked chicken fillets
  • 1 tbsp chives (dried or fresh)
  • Extra: a handful of unsalted peanuts (roughly chopped)

INSTRUCTIONS (how to make this recipe):

  • Mix all the ingredients for the Asian salad dressing in a small bowl and set aside so that the flavors can infuse well.
  • Wash and cut the Chinese cabbage and red cabbage into thin strips. You can optionally use a mandoline to get very nice thin strips.
  • Cut the smoked chicken fillets into thin slices. Are you using fresh chives? Then finely chop them.
  • Place all the salad ingredients in a large bowl and toss well. Add the dressing to taste and finish with the chopped peanuts. Enjoy your meal!
